Le Gabrielle was born from a deep love for food, family, and the art of

creating memorable dining experiences.

Our founder, Carlos Jimenez, moved from Colombia to the United States

many years ago to follow his lifelong passion for cooking. Before opening

his first restaurant, Carlos worked nearly every position in the food industry

— from dishwasher and line cook to general manager and culinary

director. Each role taught him something invaluable about teamwork,

service, and the joy of feeding others.

Over the years, his journey took him through restaurants of every style —

from sushi and hibachi kitchens to Spanish tapas bars and Latin American

eateries — shaping a diverse culinary background that continues to inspire

every dish at Le Gabrielle. Each experience helped shape his vision of what

great food, genuine hospitality, and meaningful dining should feel like.

After decades in the industry, Carlos dreamed of building a place of his

own — one that captured the warmth, creativity, and love for cooking he

shared with his late mother, Gabriela, who always encouraged him to

follow his dreams. Le Gabrielle carries her name and spirit, honoring the

inspiration that started it all.

Our first restaurant in Winder, Georgia, quickly became a local favorite,

and with the continued support of our guests, we proudly opened our

second location in Downtown Monroe. Today, Le Gabrielle continues to

celebrate good food, meaningful moments, and the community that

makes it all possible.
